Grew up with a shotgun in one hand and a fishing pole in the other. My dad always said that you can measure a man's character by the way he treats his bird dog and how well he can make a pot of gumbo 🤣
 
Welcome aboard! Your daddy was right about character and how someone treats a dog or any other animal for that matter. But some of the best gumbo I've ever eaten came from kitchens of pure evil. I was working in Berwick, LA back in the 80's. There was a bar/cafe we would get gumbo, boudin, jambalaya etc. from that required three people to get a take out order. One stayed with the truck to make sure it was still there when we got back out with the food. One went in to get the food and the third went in to make sure all three made it back to the truck. Great food BAD people that owned it, worked in it and drank regularly there. There were a few places down around Venice, LA that were like that too.
